Spring-onion whites flavour the sauce and the greens finish it. Golden tofu pieces soak up the mixture during a short braise.
Your ingredients
Get ready: Knife, kitchen paper, frying pan, spatula and small bowl.
- 450 g firm tofu
- 8 spring onions
- Up to 60 ml neutral oil, enough to cover the pan base thinly
- 2 tbsp light soy sauce
- ½ tbsp dark soy sauce
- ¼ tsp sugar
- 240 ml water
- 2 tsp cornflour
- 3 tsp cold water, for the cornflour
Let’s make it
-
Prepare tofu and onions
Cut tofu into 2 cm slices and pat dry. Finely chop spring-onion whites and cut the greens into shorter lengths. Mix cornflour with 3 tsp cold water.
-
Brown the tofu
Heat enough oil to thinly cover the pan base. Fry tofu in one layer over medium heat until golden on both sides, then lift onto a plate.
-
Build the braise
In the remaining oil, fry onion whites until lightly browned. Add both soy sauces, sugar and 240 ml water. Bring to a boil, then return tofu and add onion greens.
-
Thicken gently
Braise uncovered for about 2 minutes. Lower the heat, stir the cornflour mixture and add it gradually. Simmer until the sauce clings lightly to the tofu, then serve.
