Smooth red-bean paste becomes a sweet filling for soft steamed buns. This version starts with canned beans so you can focus on the dough and wrapping.

Your ingredients

Get ready: Food processor, non-stick pan, bowls, rolling pin, paper squares and covered steamer.

  • Filling: 350 g drained canned adzuki beans
  • Filling: 2 tbsp white sugar
  • Filling: 1 tbsp dark brown sugar
  • Filling: 80 g butter, or 40 g coconut oil
  • Dough: 350 g plain flour
  • Dough: 2 tsp fast-action yeast
  • Dough: 2 tsp baking powder
  • Dough: 1 tbsp sugar
  • Dough: 1½ tbsp neutral oil
  • Dough: about 180 ml lukewarm water, adjusted slightly as needed

Let’s make it

  1. Make bean paste

Drain the canned beans. Blend with both filling sugars and butter, adding a little water only if needed. Cook in a non-stick pan while stirring until thick enough to hold shape, then cool promptly.

  2. Knead dough

Mix flour, yeast, baking powder, dough sugar and oil. Gradually add lukewarm water to form a soft, non-sticky dough. Rest covered for 10 minutes, then knead very smooth.

  3. Wrap fourteen buns

Divide dough into 14 and keep covered. Roll each to about 10 cm across, thinner at the edges. Divide cooled filling between them, bring edges together and seal completely.

  4. Let them puff

Set seam-side down on paper squares in the steamer with space between. Rest around 30 minutes until light and plump.

  5. Steam through

Steam over boiling water for about 10 minutes, longer until dough is cooked through and filling is hot. Rest briefly before handling; a neat seam is useful, but a tasty bun need not be perfect.

Keeping it: Cool promptly, put in a covered fridge container within 1–2 hours and use within 48 hours. Reheat only once until steaming hot throughout. Freeze spare cooked portions promptly if you need longer, thaw in the fridge and reheat until hot through.
