Your new skill: Allow the resting time and work carefully through shaping or assembly.

Toasted nuts and seeds turn into crisp brittle when they meet caramel. Set everything out first: once the sugar is ready, the finishing stage moves quickly.

Your ingredients

Get ready: Frying pan, non-stick saucepan, heatproof spatula, baking paper, rolling pin and sturdy board.

  • 150 g peanuts, skinless
  • 150 g white or black sesame seeds
  • 30 g butter
  • 250 g sugar

Let’s make it

  1. Prepare before heating

Line a sturdy board or heatproof tray with baking paper and keep a second sheet ready. Break peanuts in half, toast gently until lightly golden and chop. Toast sesame seeds separately.

  2. Make caramel with help

Melt butter in the non-stick pan over low heat, then add sugar. Cook carefully, stirring occasionally, until smooth and amber-brown. Do not taste or touch hot caramel.

  3. Add nuts and seeds

Take care as an adult stirs peanuts and sesame into the caramel. Mix quickly and switch off the heat.

  4. Flatten and portion

Tip onto the prepared paper with adult help, cover with the second sheet and flatten using the rolling pin. An adult can cut portions while still workable, keeping hands away from hot sugar.

  5. Cool completely

Leave until fully cool and firm before handling or eating. Store dry and airtight. That satisfying snap comes after the wait.

Keeping it: Cool completely before packing in a dry airtight container. Keep in a cool, dry place and enjoy while crisp.
