Your new skill: Allow the resting time and work carefully through shaping or assembly.
Dried fruit and nuts make a pattern underneath this steamed sticky-rice pudding. When you turn it out, that hidden pattern becomes the top.
Your ingredients
Get ready: Bowl for soaking, small heatproof pudding bowl, covered steamer and serving plate.
- Rice: 200 g glutinous rice
- Rice: 1 tbsp white sugar
- Filling: 3 tbsp homemade red bean paste
- Toppings: 1 handful mixed dried fruit and nuts
- ½ tsp coconut oil
- Honey, optional
- Water, for soaking and enough to come level with rice in the bowl
Let’s make it
-
Soak the rice
Rinse sticky rice, cover with water and soak overnight in the fridge. Drain and mix with sugar. Chop any large dried fruit; remove all stones.
-
Build the pattern
Oil the heatproof bowl. Arrange a handful of dried fruit and nuts across its base. Add half the rice, then a flattened circle of red-bean paste smaller than the bowl, then the remaining rice.
-
Add water gently
Level the rice and carefully pour in enough water to come just level with it, avoiding disturbing the pattern.
-
Steam patiently
Cover the steamer and steam over simmering water for about 50 minutes, until the rice is cooked through. Check water beneath the bowl halfway and top up safely.
-
Turn out carefully
Rest for about 10 minutes. Loosen the edge, cover with a serving plate and invert using oven gloves. Lift away the bowl and serve warm, with optional honey.
